Triple Citrus Fish Marinade

¼ cup extra virgin olive oil
¼ cup fresh lime juice
1 Tablespoon fresh cilantro, chopped
2 teaspoons unpasteurized honey
1 teaspoon each lime, lemon and orange zest
1/8 teaspoon crushed chili flakes
Sea salt and freshly ground black pepper to taste
In a bowl, whisk together all ingredients. Add fish, turn to coat, and marinate for no longer than 15 minutes. Pan-fry, bake or grill.
Makes ¾ cup
½ red onion, cut into chunks
2 cups peppers (red, green and/or yellow) cut into chunks
2lbs halibut steaks, cut into chunks
Marinate red onion and peppers in Triple Citrus Fish Marinade for 2 to 3 hours. Add halibut and marinate for an additional 5 minutes. Preheat barbeque grill to medium heat. Skewer fish, onion and peppers onto skewers. Grill for 3 to 5 minutes per side and drizzle marinade over fish while grilling.
NOTE: If using wooden skewers, soak in water for a minimum of 30 minutes prior to assembling kebabs.
Serve immediately with Tropical Salsa (recipe below)

1 cup fresh pineapple, finely chopped
½ cup mango, finely chopped
2 Tablespoons fresh cilantro, chopped
½ lemon, juiced
1 teaspoon fresh ginger, grated
1 teaspoon Sucanat
½ teaspoon crushed chili flakes
¼ teaspoon each cumin and sea salt
Mix above ingredients in a bowl and serve.
Makes 1½ cups
